masonry wall

Hello,
I'm working on a project to transform a masonry bridge into a FEM
structural model, but first I have to locate the edges of the stones of the
bridge. We laser scanned the bridge, we have it as a cloud point, and I
segmented a small part to try to do so.
I would really appreciate a tip or so because I'm new to this program.
