I am very new to 3D scanning. Could someone please explain in layman's terms exactly what the "Final Overlap" % setting does on the "Clouds Registration" function?

When you register 2 clouds, they might not fully overlap (either because they are not representing exactly the same area, or because one cloud might have holes or missing parts, etc.
In this case, you must tell CloudCompare (and very roughly) the percentage of points of the aligned cloud are probably present in the reference cloud. It's a rough estimate, with 10% increments. You can be conservative if you are not sure.
